These Black Butte chickpeas are a unique legume and can be used in any recipes that call for garbanzo beans or ordinary chickpeas. They are a little nuttier and a little more robust than their paler counterparts. They are especially delicious in salads and Middle-Eastern-inspired dishes.

To cook: Rinse. Add 2.5 cups water per 1 cup of chickpeas. Bring to a boil and then simmer in covered pan until tender. (Approximately 2 hours) Soaking overnight will reduce cooking time.
